Single Malt Whiskey

Our Single Malt Whiskey is made from 100% NJ Malted Barley called Matapeake.  The barley is grown and malted in Shiloh, NJ at Rabbit Hill Malthouse.  Our Single Malt is fermented off the grain and double copper pot distilled.

We then put the single malt into our barrels at an extremely low barrel entry proof - 100 proof or 50% Alc./Vol.  Then after aging in our warehouse, we harvest the barrel and bottle it at barrel strength.  This means we never add water from barrel to bottle, so everything you are tasting has been aging in wood the entire time.
