Bourbon Whiskey

Our Bourbon Whiskey is made from 80% heirloom corn called Open Pollinated Waspie Valley and 20% NJ Malted Barley.  Our bourbon is fermented off the grain and then double copper pot distileld.

We then put the bourbon into our barrels at an extremely low barrel entry proof - 100 proof or 50% Alc./Vol.  Then after aging in our warehouse, we harvest the barrel and bottle it at barrel strength.  This means we never add water from barrel to bottle, so everything you are tasting has been aging in wood the entire time.

Flavor Notes:  Maple Syrup, Corncake, subtle hints of fruit
